STEP 1.*Combine rice, curd, ginger, green chilly and salt, mix well and keep aside.
STEP 2.*Heat coconut oil, splutter mustard, add red chilly, curry leaf and grated carrot. Saute for sometimes and switch off the flame then add to the rice mixture, springle fresh coriander and mix well.
STEP 3.*Special curd rice is ready to serve.
STEP 4.*Serve with tomato pickle, papad and fried curd chilly.
