Cooking Directions

  • STEP 1.In a small bowl, combine chili powder, cumin, garlic powder, salt, and pepper. Rub the mixture onto both sides of the pork chops.
  • STEP 2.Heat oil in a large skillet over medium-high heat. Add pork chops and cook for 4-5 minutes per side, or until browned.
  • STEP 3.Remove pork chops from the skillet and set aside. In the same skillet, add onion, bell pepper, and garlic. Cook until softened.
  • STEP 4.Add rice, diced tomatoes, chicken broth, and black beans to the skillet. Stir to combine.
  • STEP 5.Return the pork chops to the skillet, nestling them into the rice mixture. Cover and simmer for 20-25 minutes, or until the rice is cooked and the pork chops are tender.
  • STEP 6.Garnish with chopped cilantro and serve hot.
