The souse is essentially pickled pork. Hog head cheese is not actually cheese, but a sort of meat aspic made from pig heads and feet and usually served as a cold cut or appetizer. Like any ready-to-eat deli meat, it can pose a risk, especially to older adults, woman and people with chronic health problems. Souse, a light Caribbean dish, served cold, that traditionally consists of pickled pig meat in a clear broth flavoured with various seasonings.

  • As required Two cucumbers, grated
  • As required Scotch bonnet pepper
  • 3 No.s Juice of limes

  • STEP 1.Boil chicken in salted water till it turns tender.

  • STEP 1.Add chicken, onion, pepper, cucumber, parsley and lime juice.

step 3

  • STEP 1.Season with some salt and serve chilled.
