Ingredients for Soup Haang Wua Recipe

  • 2.50 pound oxtail
  • 2 stalks lemongrass
  • 2 tablespoon fish sauce
  • 3 tomatoes, half small diced, half wedges
  • 1/2 large onion, chopped
  • 2 inch knob ginger, sliced
  • 10 12 kaffir lime leaves, torn into chunks

How to Make Soup Haang Wua Recipe

Add the oxtail to a pot and canopy fully with water and cut the lemongrass and smash it to bruise, then add this to the pot.

Tear five kaffir lime leaves into chunks and raise the pot further. Add two tbsp of fish sauce and simmer the meat for two ½ hours.

Skim off fat that floats on the top and once done, take out the lemongrass and lime leaves. Now add chopped onions, diced tomato and simmer for another thirty minutes.


After the onions have softened and also the tomatoes have disintegrated, ensure the meat is fork-tender. If not, keep it preparation longer till it

Smash the remaining lemongrass and bruise it till it becomes unharness aromatic juices. Tear the remaining lime leaves into chunks, and add them to the pot along with ginger. Simmer for another 15-20 minutes.
