STEP 1.Add the oxtail to a pot and canopy fully with water and cut the lemongrass and smash it to bruise, then add this to the pot.

STEP 1.Tear five kaffir lime leaves into chunks and raise the pot further. Add two tbsp of fish sauce and simmer the meat for two ½ hours.

STEP 1.Skim off fat that floats on the top and once done, take out the lemongrass and lime leaves. Now add chopped onions, diced tomato and simmer for another thirty minutes.
