  • 2 Chicken thighs skin removed
  • 2 cup Chicken stock no sodium
  • 1/4 stalk Lemongrass cut into 3 pieces
  • 3/4 Kaffir lime leaves
  • 1/4 teaspoon Salt
  • As required Vegetable oil to shallow fry
  • 1/4 cup Shallots chopped the size of garlic cloves
  • 1.25 Cloves Garlic Chopped
  • 1/4 inch Fresh ginger chopped
  • 1/4 tablespoon Macadamia nuts these are a replacement for the more traditional but harder to find candlenuts
  • 0.13 teaspoon Turmeric powder
  • 0.38 teaspoon Coriander powder
  • 0.13 teaspoon Pepper
  • 0.13 cup Coconut milk
  • 3/4 tablespoon Vegetable Oil
  • As required The stock from cooking the chicken
  • 3 ounce Rice vermicelli
  • 1 Large eggs
  • As required Chopped cilantro to garnish
  • As required Fried shallots to garnish
  • As required Sambal oelek to serve
