  • 1 tablespoon Oil
  • 1/2 Onion, Finely Chopped
  • as per your need A Handful Of Curry Leaves
  • 1.50 cloves Cloves Of Garlic, Minced
  • 1/2 inch Ginger, Grated
  • 1 Green Chilies, Slit
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Coriander Powder
  • 1 cup Mixed Vegetables, Chopped
  • 1/2 can Coconut Milk
  • As required Salt To Taste
  • as required Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.In a large pot, heat oil and sauté onions until golden brown.
  • STEP 2.Add curry leaves, garlic, ginger, and green chilies. Cook for a minute.
  • STEP 3.Add turmeric powder, chili powder, and coriander powder. Stir well.
  • STEP 4.Add vegetables of your choice (such as carrots, beans, and potatoes) and cook for a few minutes.
  • STEP 5.Pour in coconut milk and bring to a simmer. Cook until the vegetables are tender.
  • STEP 6.Season with salt and garnish with fresh coriander leaves.
  • STEP 7.Serve hot with rice or roti.

Cooking Tips

  • You can add some diced chicken or shrimp for a non-vegetarian version of Sothi.
  • For a thicker consistency, you can add a tablespoon of rice flour mixed with water.
  • If you prefer a spicier curry, increase the amount of chili powder or add some chopped green chilies.
