  • 1 cup Beef Or Vegetable Broth

Cooking Directions

  • STEP 1.In a large pot, heat oil over medium heat. Add onions, garlic, and chili peppers, and sauté until onions are translucent.
  • STEP 2.Add the beef and cook until browned. Stir in the tomatoes, cumin, and oregano, and cook for another 5 minutes.
  • STEP 3.Add the peanuts and broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • STEP 4.Using an immersion blender or a regular blender, puree the soup until smooth. Return to the pot and season with salt and pepper.
  • STEP 5.Serve the Sopa de Mani hot, garnished with chopped cilantro and a squeeze of lime juice.
