Ingredients for Sooji Rusk Recipe

  • 4.17 g Semolina / suji / sooji
  • 31.67 g flour
  • 1/4 Tsp sugar
  • 5 g pure ghee
  • 2.50 g oil
  • 1.67 g milk powder
  • 1 g yeast
  • 0.33 g salt
  • 0.33 g cardomom powder
  • 11.67 As Required water
  • 0.83 g vanilla custer powder

Directions: Sooji Rusk Recipe

  • STEP 1.Bloom the yeast in warm water
  • STEP 2.Take rest of the ingredients in a bowl
  • STEP 3.Add yeast water and knead a soft dough. I used 70 ml water.
  • STEP 4.Keep it in warm place to double.
  • STEP 5.Once it rises to double punch out the air
  • STEP 6.Now flatten it and roll it tightly pinching the edges Together
  • STEP 7.Keep in a greased baking tin For second rise
  • STEP 8.Now preheat the oven to 200 degrees
  • STEP 9.Bake it for 20-25 minutes
  • STEP 10.Remove from the oven and let it cool completely.
  • STEP 11.Once cooled cut into slices and bake again for 10-15 minutes
  • STEP 12.Flip and bake on the other side too
  • STEP 13.Crispy sooji rusks are ready.
