In the world of Halwa, Suji is perhaps the most widely cooked and savoured. Probably because it is the easiest Halwa there is. In Bengali households the dessert is just referred to as 'Sooji' and the consistency is also milkier Sooji is a popular breakfast dish in Bengal, paired with Luchi (a maida-based cousin of Puri).
Sooji is an aromatic, Indian dessert flavoured with cardamom. You can prepare it in less than 20 minutes, provided you have all the ingredients in place. And you do not need very many ingredients either. All you need to do is roast semolina with raisins and cashew nuts, salt and ghee. Add in some milk and stir, stir, stir until everything is well-combined and luminous.

STEP 01
Take some lukewarm milk in a bowl

Crush the cardamoms

Heat pan with ghee.
STEP 02
Fry cashew nuts with 1 pinch salt, cardamoms, semolina and roast.
STEP 03
Roast until the colour changes slightly, and the halwa is aromatic
STEP 04
Add raisins and sugar. Cook on low heat till everything combines well.
