  • 1 Medium Zucchini
  • 0.13 teaspoon Salt
  • 0.06 teaspoon Ground pepper
  • 1/4 tablespoon Extra virgin olive oil
  • 1/4 Medium Red Bell Pepper, Chopped
  • 1/4 cup Cooked Brown Rice
  • 1 ounce Cooked smoked sausage links, chopped
  • 1/4 Cup Onion: small
  • 1/4 Nos Bell Peppers, Diced
  • 1/4 Cup Cheddar Cheese, Grated
  • As required for ganishing Freshly chopped parsely
  • 1/4 Tsp Dried oregano

Cooking Directions

  • STEP 1.Preheat your oven to 190°C. Slice the zucchini in half lengthwise and scoop out the inner flesh with a spoon, leaving about a 1/4-inch thick shell. You can save the zucchini flesh for another use or add it to the stuffing.
  • STEP 2.In a large skillet, heat the olive oil over medium heat. Add the diced smoked sausage and cook for about 3-5 minutes until it starts to brown.
  • STEP 3.Add the chopped onion and bell peppers to the skillet. Sauté for 3-5 minutes or until the vegetables are softened.
  • STEP 4.Stir in the minced garlic and cook for an additional minute. Add the cooked rice and dried oregano to the skillet. Season with salt and pepper, then stir well to combine all the ingredients.
  • STEP 5.Stuff the hollowed-out zucchini halves with the sausage and vegetable mixture, packing it in tightly.
  • STEP 6.Place the stuffed zucchini in a baking dish. Sprinkle the shredded cheddar cheese over the top. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20-25 minutes, or until the zucchini is tender.
  • STEP 7.If you'd like the cheese to be golden and bubbly, you can remove the foil and bake for an additional 5-10 minutes, keeping an eye on it. Once the zucchini is tender, and the cheese is melted and lightly browned, remove the dish from the oven.
