A simple and delicious fried rice made with egg, peas and smoked salmon. An omega-3 rich, family friendly simple salmon supper. Let the kids choose how much heat they like by serving hot sauce on the table alongside
STEP 1.1.in a wok heat 1 tbsp oil on high heat, add 2 beaten eggs and stir fry till scrambled and then remove and set aside.

STEP 2.2. Heat another 2 tbsp oil, add 1 finely diced onion, 2 finely chopped spring onions and stir fry for 2 minutes.

STEP 3.3. Next add 80 gm peas and stir fry for 2 minutes.

STEP 4.4. To this add scrambled eggs, 200 gm smoked salmon cut into bite size pieces and stir.

STEP 5.5. Add 1 tsp coarsely ground black pepper, salt to taste and gently stir and cook for 1 minute.

STEP 6.6. At this point add 500 gm cooked rice and stir fry for 5 minutes till heated through.

STEP 7.7. Transfer to dish and serve hot.
