Ingredients for Smoked Paneer Tikka Recipe

  • 300 gram Paneer cut into 1 0.5 inch cubes
  • As required Oil For Frying
  • As required Pickled onion rings
  • 2 piece Coal for smoking
  • As required Ingredients for marinade
  • 1 cup Hung curd
  • 3 tablespoon Gram flour
  • 6 Mint leaves
  • 3 Garlic Cloves
  • 1 inch Ginger
  • 1 teaspoon Fennel seeds roasted
  • 1/2 teaspoon Ajwain
  • As required Saffron strands few
  • 1/2 teaspoon Cumin powder
  • 1/2 teaspoon Coriander Powder
  • 3/4 teaspoon Black pepper powder
  • 3/4 teaspoon Turmeric powder
  • 1/4 teaspoon Black Salt
  • As required Salt

Directions: Smoked Paneer Tikka Recipe

  • STEP 1.Using a mortar and pestle roughly pound 1 inch ginger, 3 garlic cloves, 6 mint leaves, 1 tsp fennel seeds, ½ tsp ajwain seeds.
  • STEP 2.To 1 cup hung curd, add 3 tbsp besan and mix well to a smooth mixture with no lumps. Then add ½ tsp cumin powder, ½ tsp coriander powder, ¾ tsp black pepper powder, ¾ tsp turmeric powder, ¼ tsp black salt, a few strands of saffron and salt to taste. Lastly add the ground ginger garlic paste. Stir to combine all the ingredients.
  • STEP 3.In a large mixing bowl and 300 grams paneer cut into 1 ½ inch cubes. To this add the curd marinade and mix well so that all the paneer is well coated with marinade. Cover and refrigerate for at least 30 minutes before grilling.
  • STEP 4.For a tandoori flavor, place 2 pieces of coal on the flame and heat them till red hot.
  • STEP 5.To prepare the paneer, heat a kadai or a large wok and add 2 tbsp oil. Add the marinated paneer and stir fry for a few minutes.
  • STEP 6.Place the red hot coals in a small steel bowl and put the bowl in the pan. Add 1 tsp of ghee or oil to the hot coals and cover the pan. The addition of ghee will make the coal smoke and the captured smoke will add flavour to the tikkas. Keep the kadai covered for a minute or so.
  • STEP 7.Serve the smoked paneer tikka along with pickeled onion rings
