STEP 1.Remove the beef rump roast from the refrigerator and let it sit at room temperature for about 30 minutes. While the roast is resting, preheat your smoker to a temperature of about 120 C.
STEP 2.Brush the beef rump roast with olive oil to help the seasoning adhere. Sprinkle beef rub or seasoning evenly over the roast. Make sure to coat all sides.
STEP 3.Place the seasoned beef rump roast on the smoker grates, fat side up. Ensure there is enough space between the meat and other items for proper air circulation.
STEP 4.Close the smoker and let the roast smoke at the preheated temperature. It might take close to 2 hours.
STEP 5.Once the roast reaches your desired doneness, remove it from the smoker and allow it to rest for about 15-20 minutes.
Cooking Tips
If you want a smoky flavour, add wood chips or chunks to the smoker box or directly onto the coals, depending on your smoker type.
Always put your beef in the smoker fat side up.
Serving Tips
Serve the smoked beef as a main dish alongside your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh green salad.
This resting period after cooking lets the juices redistribute throughout the meat.
