Smoke flavoured spinach raita Recipe

#green This is yogurt base condiment served with Indian cuisine.. To give crunchy taste I added some boondi (fried droplets of Chickpea batter) And this spinach and tempering of cumin seeds give good color and flavour to this recipe.. And of course this smoke flavour reminds me more Indian taste (days when my mom used to cook food on charcoal)

Ingredients for Smoke flavoured spinach raita Recipe

  • 1/4 Cup Yogurt
  • 1/4 Cup spinach
  • 0.06 Cup boondi
  • 1/4 Tsp salt
  • 1/4 Tsp pepper powder
  • 1/4 Tsp black salt (optional)
  • 1/2 Tsp oil
  • 1/4 Tsp cumin seed
  • 1/4 Tsp chili powder
  • 1/4 Tsp ghee
  • 1/4 Tsp Red Chilli infused oil
  • 1.25 Pieces Mint leaves
  • 1/2 Tbsp boondi

Directions: Smoke Flavoured Spinach Raita Recipe

  • STEP 1.👉 First blanch the spinach in boil water remove water once spinach become soft
  • STEP 2.👉 Remove the hot water and add cold water or ice to maintain the green color
  • STEP 3.👉 Make a puree
  • STEP 4.👉 Add yogurt, boondi, salt, black salt and pepper powder to this and give a mix
  • STEP 5.👉 For tempering....
  • STEP 6.In a pan take 2tsp oil add cumin seed and add this cumin infused oil and cracked cumin add to the raita
  • STEP 7.👉 For smoke flavour
  • STEP 8.Take a small piece of charcoal (I took half burnt wood piece)
  • STEP 9.Put this on flame once it turned little red remove from the flame place in the small bowl put few drops of oil and pinch of hing or asofoetida,immediately it starts realising to the smoke and place this bowl to the raita and cover with the lid for about 5 to 10 minutes....remove the lid remove the bowl Garnish with spinach some boondi... Enjoy
