  • 0.60 kilogram Meaty beef bones or oxtail
  • 3/4 tablespoon Sea salt
  • 4 Whole cloves
  • 2 Whole star anise
  • 1 teaspoon Whole coriander seeds
  • 1/2 teaspoon Fennel seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Peppercorns
  • 1 Brown onions, quartered
  • 2.50 centimeter 2 large carrots, peeled, cut into pieces
  • 2.50 Garlic cloves, peeled, bruised
  • 4 centimeter Piece fresh ginger, peeled, cut into 2cm pieces
  • 1 stick Cinnamon
  • 1 tablespoon Squid brand fish sauce, plus extra to taste
  • 7.50 gram Palm sugar, grated
  • 1 tablespoon Lime juice
  • 125 gram Packet flat rice noodles
  • 100-125 gram Beef fillet steak, very thinly sliced
  • 100 gram Bean sprouts, trimmed
  • 1.50 Green shallots, thinly sliced
  • 1/2-1 Long fresh red chillies, thinly sliced
  • 3/4 cup Mixed fresh herbs, to serve
  • As required Hoisin sauce, to serve
