  • 1/2 tablespoon Olive oil
  • 1/2 Large onion chopped
  • 1 Garlic cloves chopped
  • 1/2 pound Cauliflower, chopped into very small florets
  • 1 part Leeks, white and green only, halved, washed carefully, and chopped
  • 1 Large Carrots, Peeled And Chopped
  • 1 Celery stalks, chopped
  • 1 Bay leaves
  • 1/2 tablespoon Chopped fresh thyme or 1 tsp dried thyme
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Cayenne
  • 0.13 teaspoon Black pepper
  • 4 cup Low Sodium Vegetable Broth
  • 16 ounce Diced Tomatoes With Juice
  • 1 cup Chopped kale or swiss chard
  • As required Plain yogurt, herbed goat cheese, feta, creme fraiche, grated parmesan, greek yogurt or lowfat sour cream
