This is a fast and easy recipe to put together as it doesn't heat up the kitchen too much since it cooks on a low-Slow flame. You can cook chicken cacciatore with potatoes anytime or on an easy weeknight dinner as it cooks itself like a chicken falling off the bone. Best among the italian stews, this is comfort food at its finest.

Ingredients for Slow-Cooker Chicken Cacciatore Recipe

  • 2 tablespoon olive oil
  • 1 carrot peeled and diced
  • 1 cup diced onion
  • 2 teaspoon minced garlic
  • 2 tablespoon tomato paste
  • 2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes or to taste
  • 1/4 teaspoon Salt
  • As required freshly ground black pepper
  • 1/2 cup dry white wine like sauvignon blanc, Pinot Grigio or Chardonnay
  • 8 chicken thighs skin removed
  • 28 ounce San Marzano crushed tomatoes or other high quality tomato can
  • 8 ounce cremini mushrooms quartered
  • 2 tablespoon chopped Italian parsley
  • As required shredded Parmesan cheese for garnish
  • 8 ounce cooked pasta

Directions: Slow-cooker Chicken Cacciatore Recipe

step 1

  • STEP 1.Add the olive oil to a 12-inch skillet and place it over medium heat.

step 2

  • STEP 2.Add the carrot, onion and garlic and sauté for 4 or 5 minutes, until the carrot and onion have just softened.

  • STEP 3.Add the tomato paste, oregano, basil, red pepper flakes, salt and black pepper, and stir the mixture. Allow it to cook for 1 to 2 minutes to toast the spices.

  • STEP 4.Add the wine and bring the mixture to a simmer.

  • STEP 5.Add the chicken to the slow cooker. Spoon the mixture from the skillet over the chicken and add the crushed tomatoes.

  • STEP 6.Cover and cook on low for 4 to 5 hours, just until the chicken is tender and cooked through.

  • STEP 7.Stir in the mushrooms and parsley, cover, and continue to cook for an additional 30 to 60 minutes on low.

  • STEP 8.Just until the mushrooms have softened.

step 9

  • STEP 9.Garnish individual servings with plenty of shredded parmesan cheese, and serve over pasta or rice.
