Ingredients for Singapore Stir Fry Noodles Recipe

  • 100 gram Thin rice noodles
  • 1 teaspoon Curry powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 2 Eggs Nos
  • 2 Spring onions thinly sliced Nos
  • 3 Ginger finely chopped mm
  • 2 Garlic finely chopped cloves
  • 3 Red chillies thinly sliced Nos
  • 1 Carrot cut into threads Nos
  • 30 gram Bean Sprouts
  • 4 tablespoon Peanut oil
  • As required Coriander leaves to garnish

Directions: Singapore Stir Fry Noodles Recipe

step 1

  • STEP 1.1 soak 100 gm thin rice noodles for 1 hour in hot water.

step 2

  • STEP 2.2 then remove and strain in a sieve to drain off excess moisture. Keep aside.

step 3

  • STEP 3.3 in a bowl crack 2 eggs and whisk well.

step 4

  • STEP 4.4 heat 2 tbsp peanut oil in a pan. When the oil is hot add the whisked eggs and stir fry for 1 minute. Then take the eggs out of the pan and keep aside.

step 5

  • STEP 5.5 in the same pan heat another 2 tbsp of oil and add 2 thinly sliced spring onions, 3 thinly sliced red chillies, 3mm ginger finely chopped and 2 cloves of garlic finely chopped.

  • STEP 6.6 stir fry for a few seconds till fragrant.

  • STEP 7.7 next add 1 carrot cut into thin threads ( julienned), 1 tsp curry powder, 1 tsp coriander powder and mix together.

  • STEP 8.8 add 1 tsp turmeric powder and 30 gm bean sprouts and stir fry for 1 minute.

  • STEP 9.9 then add the fried eggs and stir them in with the rest of the ingredients in the pan.

step 10

  • STEP 10.10 at this stage add the noodles and salt to taste.

step 11

  • STEP 11.11 gently mix the noodles with the other ingredients till well combined.

step 12

  • STEP 12.12 stir fry for 3 minutes.

step 13

  • STEP 13.13 transfer onto a dish and serve.

step 14

  • STEP 14.14 sprinkle with chopped coriander leaves.
