Ingredients for Singapore Spicy Noodle Soup Recipe

  • 50 gram Thin rice noodles
  • 1 teaspoon Curry powder
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Turmeric powder
  • 1/2 Onion thinly sliced Nos
  • 1 Spring onion thinly sliced Nos
  • 1/2 Ginger finely chopped cm
  • 2 Garlic finely chopped cloves
  • 2 Red chillies thinly sliced Nos
  • 4 Coriander finely chopped stems
  • 100 milliliter Coconut milk
  • 2 tablespoon Peanut oil
  • 1 tablespoon Sugar
  • 800 milliliter Chicken or vegetables stock
  • As required Salt

Directions: Singapore Spicy Noodle Soup Recipe

step 1

  • STEP 1.1 in a wok heat 2 bsp oil ndadd ½ thinly sliced onion.

step 2

  • STEP 2.2 stir fry on medium heat for 2 minutes.

step 3

  • STEP 3.3 then add ½ cm finely chopped ginger, 2 cloves finely chopped garlic, 2 thinly sliced red chillies.

  • STEP 4.4 stir fry for 1 minute till fragrant and onions are translucent.

step 5

  • STEP 5.5 then add ½ tsp turmeric powder, ½ tsp coriander powder and stir for a few seconds.

step 6

  • STEP 6.6 next add 800 ml stock and bring to a boil.

  • STEP 7.7 turn the ehatto low and simmer for 15 minutes.

step 8

  • STEP 8.8 after 15 min, pour in 100 ml coconut milk, 1 tsp curry powder, 1 tbsp sugar and salt to taste.

  • STEP 9.9 simmer on low heat for 3 minutes.

step 10

  • STEP 10.10 at this stage add 50 gm thin rice noodles to the soup and simmer for 5 to 8 minutes till noodles are cooked. Stir gently.

step 11

  • STEP 11.11 lastly add 4 finely chopped coriander stems and 1 thinly sliced spring onion.

step 12

  • STEP 12.12 turn off the heat.

step 13

  • STEP 13.13 transfer to a bowl and serve.
