Ingredients for Sichuan Spicy Prawn Meatballs Recipe

  • 160 gram Raw prawns
  • 100 gram Pak choy
  • 1/2 No.s Egg white
  • 15 gram Cornflour
  • 10 gram Sichuan red peppercorns
  • 5 gram Ginger
  • 10 No.s Dried red chillies
  • 4 No.s Garlic Cloves
  • 2 No.s Spring onions
  • 30 milliliter Spicy bean sauce
  • 1 tablespoon Cooking wine
  • 1 tablespoon Light soy sauce
  • 1 teaspoon Sugar
  • 3 tablespoon Peanut oil

Directions: Sichuan Spicy Prawn Meatballs Recipe

step 1

  • STEP 1.1 place 160 gm finely minced prawns in a mixing bowl, add 1 tbsp cooking wine , ½ egg white, 15 gm corn flour, salt to taste and stir well in clockwise direction until all the ingredients are well combined.

step 2

  • STEP 2.2 in a wok heat 1 tbsp oil on low to medium heat, add white part of 2 spring onions cut into 1 inch pieces, 4 cloves roughly chopped garlic, 5 gm ginger cut into thin threads, 10 gm sichuan peppercorns and stir fry for 2 minutes.

  • STEP 3.3 add 30 ml bean sauce and stir fry for 2 minutes.

  • STEP 4.4 add 600 ml of boiling water to the wok and bring to a boil.

step 5

  • STEP 5.5 then add 1 tsp full of prawn mixture, at a time, into the boiling liquid.

step 6

  • STEP 6.6 allow to cook for a minute before stirring. Then stir gently.

step 7

  • STEP 7.7 when the liquid returns to the boil add 1 tsp sugar, 1 tbsp light soy sauce and stir. Turn the heat to low.

step 8

  • STEP 8.8 in a sauce pan bring 1 ltr of water to a boil, add100 gm bok choy or any green leafy vegetable and blanch for 2 minutes. Then remove and drain.

step 9

  • STEP 9.9 arrange the blanched greens in a serving dish.

step 10

  • STEP 10.10 place the prawn balls on the leaves and pour the stock over them.

step 11

  • STEP 11.11 add roughly chopped green part of 2 spring onions, roughly chopped dried red chillies.

step 12

  • STEP 12.12 in a wok heat 2 tbsp of peanut oil till smoking hot. Spoon the hot oil over the top of the dish. Serve.
