Deep fried fillet of cod, simmered with fried spices like green peppercorns, ginger garlic and chili flakes with roasted peanuts.The flavors of this fish are out of control—super spicy, super intense, super delicious. This recipe moves fast, though, so stay on top of it by prepping and lining up your ingredients before you start cooking. This recipe is from Taiwanese-American cook Lisa Cheng Smith’s spectacular Lunar New Year feast.

Ingredients for Sichuan Spicy Peppercorn Cod Recipe

  • 500 gram Skinless cod fillet
  • 1 flakes Chili tbsp
  • 2 No.s Spring onions
  • 1/2 piece Ginger
  • 4 No.s Garlic Cloves
  • bunch Coriander roughly chopped A
  • 50 gram Unsalted roasted peanuts
  • 1 tablespoon Green peppercorns
  • 4 tablespoon Corn flour
  • 50 milliliter Stock or water
  • As required Salt

Directions: Sichuan Spicy Peppercorn Cod Recipe

step 1

  • STEP 1.1 place 500 gm skinless fillet of cod cut into 1 to 2 inch chunks in a large mixing bowl, add 4 tbsp corn flour and toss to coat the fish.

step 2

  • STEP 2.2 in a pan heat 2 tbsp oil, add 1 tbsp green peppercorns and fry for a minute.

step 3

  • STEP 3.3 then add ½ cm roughly chopped ginger, 4 cloves roughly chopped garlic, 1 tbsp chili flakes, 2 roughly chopped spring onions, 50 gm unsalted roasted peanuts and fry together for 1 ½ minute on medium heat.

  • STEP 4.4 remove the pan from the heat and set aside.

step 5

  • STEP 5.5 in a wok heat 1 ltr oil till smoking hot. Add the pieces of fish and deep fry for 1 to 2 pieces.

  • STEP 6.6 then remove from the oil and drain.

step 7

  • STEP 7.7 discard most of the oil retaining only 1 tbsp in the wok and heat. Add the fish back in the wok, add the fried spices, add a small bunch or desired amount of coriander roughly chopped, salt to taste and 50 ml stock or water.

step 8

  • STEP 8.8 cover and cook for 5 minutes on medium heat.

step 9

  • STEP 9.9 transfer to a dish, garnish and serve.
