Ingredients for Shrimp Meatballs Recipe

  • As required Ingredients for aromatic water
  • 5 Garlic Cloves
  • 5 No.s Ginger, small slices
  • 1/4 cup Water

  • 350 gram Fresh shrimp
  • 90 gram Pork Belly
  • 130 gram Filleted fish meat
  • As required Prepared aromatic water
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 tablespoon Chinese cooking wine
  • 2 teaspoon Fish sauce
  • As required White pepper powder
  • 1 Egg white
  • 2.50 tablespoon Potato starch
  • 1 tablespoon Sweet potato starch
  • 3 tablespoon Crushed ice

Directions: Shrimp Meatballs Recipe

step 1

  • STEP 1.1 peel and devein 350 gm fresh shrimp.

step 2

  • STEP 2.2 cut 90 gm pork belly into small cubes.

step 3

  • STEP 3.3 dice 130 gm filleted fish meat.

step 4

  • STEP 4.4 place them in a tray, cover and put in the freezer for 40 minutes. Keep ⅓ of the shrimp out of the freezer and roughly chop them and set it aside.

  • STEP 5.1 to make aromatic water add 5 cloves of garlic, 5 small slices of ginger and ¼ cup water in a small grinder jar and blend well.

  • STEP 6.2 pour the blended liquid into a small bowl and add 1 tsp salt, 1 tsp sugar, 1 tbsp chinese cooking wine, 2 tsp fish sauce and white pepper powder to taste. Mix together and put the bowl in the freezer.

  • STEP 7.3 after 40 minutes take the seafood and pork out of the freezer. The ingredients will be cold without being frozen. This is so that the heat generated by the food processor when blending, will not cause the seafood to cook.

  • STEP 8.4 place all the pork, fish, shrimp into the food processor bowl.

  • STEP 9.5 add 1 egg white, 2 ½ tbsp potato starch,1 tbsp sweet potato starch, 3 tbsp crushed ice to lower the temperature, and the prepared aromatic water.

  • STEP 10.6 put the lid on the food processor and blend for about 4 minutes til get a smooth thick paste and till the ice completely melts.

  • STEP 11.7 transfer this to a mixing bowl and add the diced shrimp. Fold it in well and set the mixture aside.

  • STEP 12.8 to poach the shrimp balls, heat a pot of water to 160 degrees fahrenheit. There will be small bubbles on the bottom and sides of the pot.

  • STEP 13.9 wet hands with water to prevent the meat paste from sticking to them.

  • STEP 14.10 gather a fistful of paste and squeeze it out through the thumb and index finger end of the fist ( like a toothpaste tube). It will come out as a ball. Scoop it with a spoon and release it into the water.

step 15

  • STEP 15.11 once all the balls are formed and put in the water, turn the heat to high and bring it to a slight boil.

step 16

  • STEP 16.12 turn off the heat and using a sieve or slotted spoon transfer all the balls to an ice bath to stop the cooking process immediately.

step 17

  • STEP 17.13 the shrimp balls are not fully cooked and cannot be consumed yet. They require further cooking. At this stage they can be stored in the freezer.

step 18

  • STEP 18.14 shrimp balls can be sliced like sausage and cooked in a stir fry with vegetables and seasoning.

step 19

  • STEP 19.15 shrimp balls can also be boiled in stock, directly from the freezer without thawing, and cooked with noodles to make a noodle soup. Served with blanched greens and seasoning like garlic paste and chilli oil.
