Shrimp Ceviche is one of the most loved dishes around. It's light and fresh, with the flavour of zingy lime, buttery avocado, luscious tomatoes, and a jalapeño kick to round it off. Serve as a light snack, lunch or dinner. Make sure you have tortilla chips on hand for scooping, whichever method you prefer. Raw seafood is marinated in citrus juice for traditional ceviche. Citrus juice's acid alters the protein structure of the shellfish, thus “cooking” it without the need for heat. Ceviche has its origins in the ancient Incan civilization, which today corresponds to the countries of Peru and Ecuador. Escabeche (the process of macerating raw fish and meat in vinegar, citrus, and spices) was carried to the Americas from Spain and is associated with the Muslim roots of Spanish cuisine. This dish is perfect for the summer season and for all seafood lovers.

  • 1 pound large shrimp
  • 1 cup Lime Juice
  • 1 tomato diced
  • 1/2 cucumber diced
  • 1 jalapeño finely diced
  • 1/4 onion diced
  • 1/2 bunch Cilantro
  • As required Salt

  • STEP 1.Peel and wash the shrimp

  • STEP 2.Chop into small pieces

  • STEP 3.Add 1cup of lemon juice

step 4

  • STEP 4.Cover and refrigerate

step 5

  • STEP 5.Take the shrimp out

step 6

  • STEP 6.Add tomato,cucumber,jalapeno,onion and cilantro

step 7

  • STEP 7.Cover and refrigerate again

step 8

  • STEP 8.When the shrimp is pink it is ready

  • STEP 9.Serve with avocado toppings
