Stir fried chicken tossed in a sweet tangy dark sauce flavoured with ginger garlic spicy chillies and rice wine.This stir-fried chicken dish uses Shanghai-style noodles. These are thick noodles that are packaged in plastic bags and sold fresh in Asian/Chinese markets. If you can’t find Shanghai noodles, feel free to replace them with Japanese udon noodles, or you can use thick Italian pasta such as linguini or tagliatelle. While this dish is usually served as a side dish, it is hearty enough to be a quick dinner in itself. You can adjust the seasonings to your taste.

Ingredients for Shaighai Chicken Stir Fry Recipe

  • 600 g Chicken thigh fillet cut into small bite size gm
  • 20 gram Ginger finely chopped
  • 4 No.s Spring onion finely chopped
  • 4 No.s Garlic finely chopped
  • 2 No.s Red spicy chilli peppers thinly sliced
  • 5 teaspoon Chinese spice powder 1 0.5
  • 2 tablespoon Shaoxing rice wine
  • 1.50 tablespoon Dark soy sauce
  • 1.50 tablespoon Brown sugar
  • 50 milliliter Water
  • 2 tablespoon Oil

Directions: Shaighai Chicken Stir Fry Recipe

  • STEP 1.In a wok heat 2 tbsp oil on high heat and add 600 gm chicken thigh fillet cut into small bite size pieces and stir fry for 5 minutes till the chicken changes colour and raw pink colour disappears.
  • STEP 2.At this stage add 20 gm finely chopped ginger, white part of 4 spring onions finely chopped, 1 ½ tsp chinese five spice powder, 4 cloves garlic finely chopped and 1 thinly sliced spicy red chilli pepper and continue to stir fry for 3 minutes.
  • STEP 3.Then add 2 tbsp Shaoxing rice wine, 1 ½ tbsp dark soy sauce ,1 ½ tbsp brown sugar, 50 ml water and mix well.
  • STEP 4.Turn the heat to medium and cook for 8 minutes, stirring regularly.
  • STEP 5.Then turn the heat to high and stir to ensure that all the pieces of meat are evenly coated with the sauce. Turn off the heat.
  • STEP 6.Transfer to a serving dish and garnish with finely chopped green part of 4 spring onions and 1 red spicy chilli pepper thinly sliced.
