#paneer Generally shaam savera koftas have outer layer green made using potato mixed with spinach and inner layer white made from paneer. In this recipe have made changes in my own way. Have changed the colour of the layers of the kofta. Outer layer is of potatoes only and inner layer is of paneer with beetroot. This gives a beautiful pinkish colour to the inner layer. Have served the koftas with puris.

Ingredients for Shaam savera kofta my style Recipe

  • 0.40 Cups big sized boiled potatoes
  • to taste Salt
  • 1/5 tsp Cumin seeds powder
  • 0.40 tsp Corn flour
  • 1/5 Cups Crumbled paneer
  • 1/10 Cups Boiled beetroot
  • 1/5 tsp Kashmiri red chilli powder
  • 0.30 tsp cornflour (cornstarch)
  • as required oil for frying the koftas
  • 0.40 tbsp Oil
  • 1/10 tsp Cumin seeds
  • 1/10 tsp Mustard seeds
  • 1/5 Pieces Bay leaf
  • 0.40 pieces small pieces of cinnamon sticks
  • 1/5 Cups Big onions
  • 1/20 cup Cashews
  • 1/5 Tbsp green chillies
  • 1/5 Tbsp chopped garlic cloves
  • 1/5 Tsp Small piece of ginger grated
  • 1/5 tsp poppy seeds soaked in water for 20 minutes
  • 0.30 Cups medium tomatoes chopped and pureed
  • 1/20 tsp Asafoetida
  • 1/5 tsp Turmeric powder
  • 0.40 tsp Kasmiri Red Chilli Powder
  • 0.40 tsp Garam masala
  • 1/5 tsp cardamom and Nutmeg Powder

Directions: Shaam Savera Kofta My Style Recipe

  • STEP 1.For the koftas: For the outer layer- smash the boiled potatoes properly. Now add salt, cumin powder and corn flour. Mix everything properly.
  • STEP 2.For the inner layer- smash the paneer, grate the beetroot finely. Now add the salt, chilli powder and corn flour. Mix everything properly.
  • STEP 3.Make small balls of the inner layer.

  • STEP 4.Cover the small balls with potato layer and make koftas from them.

  • STEP 5.Now deep fry the koftas in oil at medium flame.

  • STEP 6.Let the koftas cool down.

  • STEP 7.For the gravy: heat oil and ghee in a pan and add all the ingredients for tempering to it.
  • STEP 8.In a mixture jar, grind onions, green chillies, ginger, garlic, cashews and poppy seeds. Add some water and grind it to make smooth paste.
  • STEP 9.When mustard seeds start crackling add the above white paste.
  • STEP 10.While this paste is being cooked make tomato puree.
  • STEP 11.Add the puree to the white paste after later start leaving oil on the sides or has shine.
  • STEP 12.Now add all the dry masalas and salt to taste and let the gravy cook for 10-15 minutes.
  • STEP 13.Assembling the recipe: Cut the fried koftas into half.
  • STEP 14.In a serving plate first place the gravy then place the cut koftas above it.
  • STEP 15.Serve the Shaam savera koftas with puri or parathas.
