Sellou, the Moroccan Energy Mix but with a healthy twist.Moroccan sellou, also called sfouf or less commonly zmita, is a rich, nutty confection of ground fried almonds, ground toasted unhulled sesame seeds, and browned flour. Flavored with cinnamon and anise and sweetened with honey or sugar, sellou might be presented as a powdery, decorated cone; as a rounded, molded mound; or as compact bite-sized balls or squares. Ingredients for Sellou Recipe
- 150 gram whole wheat flour
- 100 gram stone ground whole wheat flour
- 250 gram sesame seeds
- 150 gram raw almonds
- 100 gram roasted almonds

How to Make Sellou Recipe
STEP 01
First, we need to brown the flour. In a baking pan, spread the stone-ground whole-wheat flour, and discard the leftover particles. Add the whole wheat flour and mix and toss them well.

To make the almond butter, toast 150 grams of raw almonds in the oven at 180 c / 350 f for 15 minutes. Let them cool, then place in a blender and mix them well. From time to time, stir the almond mixture to evenly spread it in the blender.

Keep mixing for 10-12 minutes until the almond powder starts releasing its natural oil and transforms into a creamy texture.

Place the sesame seeds in a pan, and roast them on a medium flame for a few minutes until they lose their raw taste and start popping.

Place the roasted sesame seeds in a blender and mix until the sesame seeds are half pounded.

Place the gum arabic pebbles on a flat surface, add the sugar, and then grind them with the bottom of a cup until you get a fine powder. Also, take the 100 grams of almonds and chop them into a coarse mixture.

Blend the brown sugar in a blender until you get a fine texture, grate the nutmeg.

Mix the ingredients in a large mixing bowl, combine the following ingredients the flour mix, the sesame seeds, crushed almonds, gum arabic powder, ground cinnamon, ground anise, ground nutmeg, salt, and almond butter. Mix well until well integrated.

Add powdered brown sugar, honey, and olive oil. Mix until all ingredients are combined.

Taste sellou and adjust sweetness (powdered brown sugar or honey) to your preference., knead the sellou for 5 minutes until you get a homogenous paste.

You can present sellou as is on a plate and decorate it with blanched roasted almonds.
