Ingredients for Seco De Pollo (Equadorian Chicken Stew) Recipe
As required Ingredients for dry rub
2 teaspoon Salt
2 teaspoon Paprika
1.50 teaspoon Black pepper powder
1.50 teaspoon Cumin powder
As required Ingredients for puree
2 No.s Tomatoes medium size, cut into chunks
1/2 No.s Onionmedium size, cut into chunks
4 Garlic Cloves
bunch A coriander leaves
bunch A parsley leaves
2 cup Beer
1/2 cup Orange juice
As required Ingredients for stew
4 Chicken marinated with prepared dry rub thigh
3 tablespoon Chilli oil
4 Garlic minced cloves
1/2 No.s Bell pepper chopped fine
1/2 No.s Onion chopped fine
1/4 cup Coriander stem diced
2 teaspoon Aji seco powder
2 As required Salt tsp
1 No.s Potatocut into chunks
2 tablespoon Coriander leaves chopped
Directions: Seco De Pollo (equadorian Chicken Stew) Recipe
step 1
STEP 1.Wash and dry 4 chicken thighs (2 lb)
step 2
STEP 2.-1)to prepare the dry rub, in a small bowl add 2 tsp salt, 2 tsp paprika, 1 ½ tsp black pepper powder, 1 ½ tsp cumin powder. Mix together.

STEP 3.-2)rub 4 chicken thighs well with the dry rub. Keep aside to marinate for 30 minutes.

STEP 4.-3)in a blender add 2 medium size tomatoes cut into chunks, ½ medium size onion cut into chunks, 4 cloves garlic, small bunch coriander leaves, small bunch of parsley leaves , 2 cups beer, ½ cup orange juice. Blend together to get a smooth puree. Keep aside.

STEP 5.-4)in a cooking pot add 3 tbsp chilli oil, 4 minced cloves garlic, ½ bell pepper chopped fine, ½ and onion chopped fine and stri together.

STEP 6.-5)add ¼ cup diced coriander stem and stir on medium heat till the onion becomes transparent.

STEP 7.-6)push all the ingredients to the side and add the chicken thighs to the pot. Arrange them so that all the pieces are touching the hot surface of the pot.

STEP 8.-7)let them fry on medium heat for a few minutes till the chicken skin browns. Then flip them over to fry on the other side till well browned.

STEP 9.-8)at this stage add the vegetable and beer puree and mix all the ingredients in the pot well. Stir to ensure that nothing is stuck to the bottom of the pan.

STEP 10.-9)cover and bring it to a boil

STEP 11.-10)then add 2 tsp ‘aji seco powder’ or any hot red chilli powder mixed with onion powder and rice powder and 2 tsp salt to taste. stir well to ensure that the powders are well dissolved.

STEP 12.-11)cover the pot and reduce the heat to low. Simmer for 1 ½ hour.

STEP 13.-12)then add 1 potato cut into chunks, cover and simmer for another 20 minutes or till the chicken is cooked through.

STEP 14.-13)lastly add 2 tbsp chopped coriander leaves and mix.

STEP 15.-14)traditionally this is served with yellow rice, sliced avocado and fried banana.
