Ecuadorian seco de chivo is a goat stew dish braised in a sauce of garlic, cumin, achiote, oregano, peppers, onions, cilantro, tomatoes, chicha or fermented corn drink, naranjilla or lulo juice, panela and spices.

Ingredients for Seco De Chivo Recipe

  • 900 gram goat meat with bones, cut in medium to large chunks
  • 6 No.s garlic cloves crushed
  • 1 teaspoon ground cumin
  • 1 teaspoon dry oregano
  • 2 cup Chicha
  • 2 tablespoon Oil
  • 2 teaspoon ground achiote
  • 1 Nos red onion minced
  • 1 No.s bell pepper minced
  • 3 No.s matoes cut into quarters
  • 1 No.s aji or spicy pepper red jalapeño or serrano
  • 1/2 bunch Cilantro
  • 2 No.s whole naranjillas fresh or frozen or 0.5 cup naranjilla juice
  • 2 tablespoon grated panela or piloncillo
  • 1 teaspoon all spice
  • 2 tablespoon cilantro finely chopped
  • As required Salt

Directions: Seco De Chivo Recipe

step 1

  • STEP 1. season the goat meat with cumin, garlic, oregano, salt and 1 cup of chicha or beer.

step 2

  • STEP 1. mix everything well and marinate for at least an hour.

step 3

  • STEP 1. remove meat from the marinade.

step 4

  • STEP 1. heat some oil in a pan over flame marinated meat in it until it turn evenly brown from all sides.

step 5

  • STEP 1. reduce the flame to medium and add minced onions, achiote and bell peppers.

step 6

  • STEP 1.cook this until onions become soft and translucent.

step 7

  • STEP 1. blend the tomatoes, cilantro and hot peppers with the remaining chicha/beer and naranjillas juice and mix it with meat.

step 8

  • STEP 1. add marinade juices, grated panela and all spices in it.

step 9

  • STEP 1. bring the mixture to boil and reduce the flame.

step 10

  • STEP 1. simmer until the meat becomes tender and the sauce gets thickened.
