The addition of the fresh sea urchin adds a luxurious, savoury and decadent richness to the standard scrambled eggs on toast, taking this everyday meal to a restaurant quality dish. Add crème fraîche, salt, pepper, and chives for extra flair and piles the eggs on top of toast drizzled with olive oil. The soft scramble is custardy, velvety, and filled with flavor.

  • STEP 1.Crack the eggs in a bowl and add 3 butter knobs to it.
