  • 2 piece chicken quarters
  • 5 cup Water
  • 1 cup rice wine
  • 2 No.s Star anise
  • 2 No.s bay leaves
  • 1 piece cinnamon bark
  • 2 tablespoon Salt
  • As required For sauce
  • 1/2 cup Chicken Broth
  • 1/2 cup sichuan red chilli
  • 2 tablespoon light soy sauce
  • 2 tablespoon chilli oil
  • 2 tablespoon sesame oil
  • 1 tablespoon chinkiang vinegar
  • 1 tablespoon minced ginger
  • 1 tablespoon Garlic
  • 1/2 teaspoon white sugar
  • 1/2 teaspoon toasted sesame seeds
  • As required Toppings
  • 2 tablespoon toasted peanuts
  • 2 tablespoon green onions

How to Make Schezwan Chicken Recipe

step 1

STEP 01

Bring a pot of water to boil and blanch the chicken for 2 minutes.then remove.

STEP 01

Transfer blanched chicken quarters to the new pot of water.

STEP 01

Add rice wine, bay leaves, star anise, cinnamon bark and salt. Stir for a minute and bring to boil. Then simmer for 30 minutes and cover. Turn off the stove and let it rest for an hour.

STEP 01

After an hour remove it for chopping.save ½ cup broth for later. Cut the chicken in slices and thick.

STEP 01

For sauce in a beaker add sichuan red chilli oil with sediment to broth. Light soy sauce, sesame oil, chilli oil, vinegar, salt, minced garlic and ginger, toasted sesame seeds and mix together.

Pour this sauce from the top of the chicken in a serving bowl and garnish with some peanuts.
