  • 1/4 pound Sea scallops, washed and dried with a paper towel
  • 1/2 teaspoon Olive oil
  • As required Salt and pepper
  • 2 ounce Baby spinach and arugula
  • 1/2 tablespoon Olive oil
  • 1/4 tablespoon Champagne vinegar, white wine vinegar would work
  • 1/2 tablespoon Chopped shallots
  • As required Salt and pepper
  • 3/4 Grapefruit juice from reserved slices of grapefruit
