Cooking Directions

  • STEP 1.In a large skillet, heat the oil over medium heat.
  • STEP 2.Add the sausage and cook until browned.
  • STEP 3.Remove the sausage from the skillet and set aside.
  • STEP 4.In the same skillet, add the onion, garlic, and ginger.
  • STEP 5.Cook until the onion is translucent.
  • STEP 6.Add the curry powder, cumin, and coriander.
  • STEP 7.Cook for another minute, until fragrant.
  • STEP 8.Stir in the diced tomatoes and coconut milk.
  • STEP 9.Bring the mixture to a simmer and cook for 10 minutes.
  • STEP 10.Add the cooked sausage back to the skillet and simmer for another 5 minutes.
  • STEP 11.Serve the curry over rice or with naan bread.
