  • STEP 1.#METHOD :
  • STEP 2.# PEANUTS HOLIGE.
  • STEP 3.#METHOD :
  • STEP 4.First mix n soak 2 cups of maida n 1/2 cup of sooji rava, 3 tb sp of cooking oil n....n mix n knead a soft n smooth dough in a required quantity of water....n make it smooth dough n wrap with cotton cloths n keep rest it....for...4 to 5 hours for smooth dough....for making Polis....not loose n not fully tight....knead it in a medium soft dough....cover the dough wt cotton cloth ....n keep asides for rest....n smooth....dough.....
  • STEP 5.Dry roast the 2 cups of peanuts in a pan...after cool ...peel the skin n splits...put it in a mixer jar with same quantity of jaggery powder n make a soft n smooth mixtures... put it in a mixing Bowl.....n add 2 tsp of pure ghee....n cardmom powder n mix well...n knead it smooth...dough....n take little quantity of....n make small round shapes....n keep asides.......
  • STEP 6.After some hours....Take a small quantity of dough n make it flat....n keep the Peanuts balls in the center...n close the maida sheet neatly....n dust little maida flour....n roll it into " Holige or spread the filled the maida ball...press it into Holige shape apply it wt little Oil in both sides....n put it in a Hot tava....sprinkle the Oil in both sides......n roast in golden brown colour....n cook until it reaches golden brown colour....wt again wt little oil...n make it very soft....' Polis...n fold it...n put it in a serving plate....wt Pure ghee....n enjoy the Hot Hot ...Peanuts Polis....in specially in festivals.........
  • STEP 7.#2 MIXED VEGITABLES PALYA.

  • STEP 9.Wash n Cut 1 Bowl.... all types of Vegitables...n keep asides....take a pan ...Heat 2 tb sp of cooking Oil....add mustard, Jeera, urad ddal...asfoetida n 2 pieces of green chillies.....chopped curry leaves n make it splutter...add chopped Veggies....n mix well....pour required quantity of water.... n mix well.....sprinkle salt to tastes....n mix n close the lid n cook until it reaches smooth....when the veggies half cooked....add red chilli powder, masala powder....n mix well...( Add little jaggery according to your tastes : Is Optional) add grated fresh coconut n chopped coriander n mix well....if u can add lemon juice or tamarind juice.....n mix n serve with. ...Jower Roti....or wt chapatis.....n enjoy the tastes of mixed Vegitables palya....in Bhogi Habba.....before 1 day it's a Sankranti.....
  • STEP 10.3. GREEN PEAS USLI.
  • STEP 11.#METHOD :
  • STEP 12.Take 1 Bowl n Peel the skin of the fresh Green peas....n wash it ....n drain the water...take a kadai.....put 1 tb sp of cooking oil...whenits heat, add 1 tsp Mustard, 1 tsp of Jeera, asfoetida, chopped 4 green chillies, 2 tsp of chopped curry leaves.. n make it splutter....to ....add Green Peas n stir... sprinkle salt to tastes....n mix well....n close the lid n cook until it reaches smooth....open n add Grates fresh coconut, lime juice n chopped fresh coriander n mix n serve with Bhogis Lunch......
  • STEP 13.4.MIXED DAL KOSAMBARI.
  • STEP 14.#METHOD :
  • STEP 15.Soak 2 tb sp of chana dal, 2 tb sp of Moong dal in a Bowl for about 2 hours ....drain the water...then add salt to tastes, lime juice , grated fresh coconut, chopped fresh coriander n mix welll...put Grated fresh coconu, 2 green chillies, little fresh coriander n grind n paste in a mixer jar.. n mix wt the dals.... in a .add the seasonings....with ( Oil, Mustard, jeera, chopped curry leaves, asfoetida.... it splutter n make it seasonings....)add lemon juice according to the tastes... n mix well....n serve in a lunch as a side dish.....n enjoy the tastes......
  • STEP 16.5. RICE MASALA PEAS HUGGI.(Pongal )

  • STEP 18.First Dry roast the 2 tb sp of dry Dhaniya, 2 tsp of jeera, 1 tsp of Black pepper corns, 1 pieces of cinnamon, 2 tsp of Dry curry leaves, 2 tb sp of Dry coconut ... n keep it for cool down.....after it's cool....put in a mixer n make it little coarsely Huggi powder....n keep asides....
  • STEP 19.Roast 1 cup of moong dal, 2 tsp of jeera, in a little pure ghee....
  • STEP 20.When its turn to aromatic....add washed Rice n mix well....n stir....add required quantity of water...n mix ....add salt to tastes, 1 tsp of turmeric powder, 1 tsp of jeera n mix welll...when the Rice is half cooked. ....add Huggis masala powder n mix welll....
  • STEP 21.Add little jaggery if u want....add 2 tb sp of pure ghee....n stir....continuously....for....its smooth.. sprinkle chopped coriander, grated fresh coconut n mix ...n stir.....now the rice turns to ' Huggi smells fully aromatic.... n come n cooked in thicken....off the flame n mix well....
  • STEP 22.Serve in a serving plate....wt little pure ghee....n enjoy Hot Hot the tastes of ' Traditional Huggi Rice in different tastes n flavors in Bhogi day....
  • STEP 23.6.MIXED VEGGIES, HYCANITH BEANS N PEAS RASA OR GRAVY.
  • STEP 24.#METHOD :
  • STEP 25.Dry roast the 1 tb sp of Urad dal, 1 tb sp of chanadal, 2 tsp of Jeera, 1 tb sp of dry Dhaniya, 1 tsp of Black pepper corns, 1 tb sp of curry leaves, 2 tsp of white or Black sesame seeds...n after its cooling....make smooth powder in a mixer jar.....n keep asides.....
  • STEP 26.Take a kadai or pan....Put 1 tb sp of cooking oil....mustard, jeera, chopped curry leaves, asfoetidan mix n make it splutter....add chopped mixed veggies, Hycanith Beans n fresh Green peas .. n mix well.....add little quantity of water....salt to tastes n powderd masala n mix well....n cook until its tender....add n squeeze tamarind water, jaggery powder, fresh coconut n fresh coriander n mix well n serve.. wt Rice, Rotis n wt Chapatis.....
  • STEP 27.7. Chopped Cucumber pieces, Carrots, chopped Radish pieces.....served in a Bhogis Lunch....
