Sancocho is a hearty soup, almost like a stew and is a traditional dish in the region of Antioquia, Colombia that combines potatoes, yuca, corn, plantains and meat. For me and my family this is the ultimate comfort food and is absolutely delicious. Sancocho is a traditional chicken broth in several Latin American cuisines. The best way to eat this soup is with some salsa or cumbia music playing in the background.

Ingredients for Sancocho Recipe

  • 0.08 teaspoon olive oil
  • 0.42 No.s scallions, chopped
  • 0.08 No.s tomato, chopped
  • 0.33 cloves garlic, chopped
  • 1/25 No.s onion, chopped
  • 1/2 piece skinless chicken thighs on the bone
  • 0.08 cup chopped cilantro
  • 1/4 No.s medium potatoes
  • 1/4 piece Yucca
  • 1/4 No.s ears corn
  • 0.08 No.s small green plantain
  • 0.08 teaspoon cumin
  • 0.17 piece chicken bouillon cubes
  • As required Salt

Directions: Sancocho Recipe

step 1

  • STEP 1.Heat some oil in a pan and add scallions, onions and garlic to it. Add chicken to this and season it with some salt.

step 2

  • STEP 1.Saute it for a few minutes and add yucca and plantain. Fill the pan by adding some water.

step 3

  • STEP 1.Now add cumin, chicken bullion and half of the cilantro to cover the pan.

step 4

  • STEP 1.Cook it for 40 minutes, add potatoes and cook for another 15 minutes. Add corn and cook for 7 minutes. Serve hot with bread.
