Sambar is a lentil-based vegetable stew, cooked with pigeon pea and tamarind broth. It is popular in South Indian and Sri Lankan cuisines. Sambar is a South Indian stew made with lentils, mixed vegetables, herbs. Hence a comfort food at its best. The classic dish is so easy to make and is so heavenly that you will turn to time and again. This traditional recipe is hearty, super flavorful and loaded with vegetables.

Ingredients for Sambar Recipe

  • As required For Dal
  • 1/2 cup Tuvar Dal
  • As required Salt
  • 3/4 teaspoon Turmeric Powder
  • 1 tablespoon Tamarind Paste
  • As required For Vegetables
  • 12 No.s Shallots
  • 1/2 cup Eggplant
  • 1/2 cup Carrot
  • 1 No.s Drumstick
  • 1/2 cup Yellow Pumpkin
  • 1 cup Water
  • As required For Masala
  • 4 tablespoon Vegetable Oil
  • 1 teaspoon Mustard Seeds
  • 7 No.s Dry Red Chillies
  • 2 sprig Curry Leaves
  • 1/2 cup Onion
  • 1 cup Tomato
  • 2 tablespoon Sambar Powder
  • As required For Tempering
  • 1 tablespoon Mustard Seeds
  • 10-12 Curry Leaves

Directions: Sambar Recipe

step 2

  • STEP 1.1 - wash the dal and pressure cook it with 2 cups of salt water and turmeric.

step 3

  • STEP 2.2 - cook it for 1 whistle at high flame and then reduce the flame and cook for another 8 minutes.

step 4

  • STEP 3.3 - once the dal gets cooked, add tamarind paste to it and mix well.

step 5

  • STEP 4.4 - in a pan add your vegetables, water, salt and turmeric.

step 6

  • STEP 5.5 - cover and cook until the vegetables bcom soft.

step 7

  • STEP 6.6 - heat some oil in a pan and add mustard seeds, curry leaves and dry red chilli.

step 8

  • STEP 7.7 - after a few seconds add onions to the pan and cook until they turn translucent.

step 9

  • STEP 8.8 - add chopped tomatoes and cook it for 5 minutes.

step 10

  • STEP 9.9 - add masala and cooked dal to the pan and cook for 10-12 minutes at medium flame.
