And if you are planning to make a squid starter for your upcoming house party, then this dish is the one to bookmark.  The dish is an easy, healthy, gluten-free fried cuttlefish dish tossed with salt, black pepper and veggies. It is a total no-brainer to make this Cantonese Salt and Pepper Squid. Prepared in a similar manner to Cantonese Salt & Pepper Pork Chops, the fried pieces of calamari/squid are tossed in a mixture of crunchy stir-fried garlic, ginger, and hot green peppers. The squid is coated in cornstarch and then fried, yielding an airier crunch, but the mixture of semolina flour, all-purpose flour, and cornmeal makes for an extra hearty crunch with a real depth of flavor.

Ingredients for Salt And Pepper Squid Recipe

  • 1 Nos garlic cloves
  • 2 Nos scallions
  • 1 Nos shallots
  • 1 Nos bird eye chillies
  • 400 gram Cuttlefish
  • 500 milliliter Water
  • 1 Nos egg
  • 300 milliliter Oil
  • 8 tablespoon corn flour
  • 1 tablespoon Oil
  • 1 teaspoon sesame oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper

Steps To Prepare

  • STEP 1.Mince the garlic cloves. Slice shallots, chillies lengthwise.
  • STEP 2.Clean and cuttlefish and score it from inside following a criss-cross pattern.
  • STEP 3.Cut the score cuttlefish in smaller chunks. Add water in a pot and boil cuttlefish until they curl.
  • STEP 4.Once they are curled, take them out and place them into a bowl of cold water.

Cooking Directions

  • STEP 1.Add oil to a pot and heat.
  • STEP 2.Remove excess water from squid and then dip them into egg yolk followed by cornflour coating.
  • STEP 3.Now place the coated squid in the pan and fry it in oil until golden brown.
  • STEP 4.In a separate pan, add oil & heat it.
  • STEP 5.Add garlic, shallots and saute it until fragrant.
  • STEP 6.Then add chilli slices, scallions, sesame oil and saute until scallions begin to wilt.
  • STEP 7.Now turn off the flame and put the pan down.
  • STEP 8.Lastly, add fried cuttlefish into the pan and mix well. Add salt, pepper mix and serve.
