Sai Ooah Recipe

An iconic dish of Northern Thailand, Sai Ooah "sai ua" is one of the most flavourful sausages, can think of. The pork is mixed with an aromatic curry paste, grilled, then served with sticky rice and fresh veggies. Try this super tasty snack made with galangal, lemongrass, dry red chilli, shallots, garlic, turmeric, sausages and sauces for your next weekend brunch or as your get together starters.

Ingredients for Sai Ooah Recipe

  • 8-10 dried red chili
  • 1 stalk Lemongrass
  • 3-4 slice galangal
  • 2 inch Turmeric
  • 0.33 cup Shallots
  • 4 cloves garlic
  • As required Shrimp paste
  • As required Kaffir lime
  • As required Fish sauce
  • 450 fatty ground sausages
  • 1 stalk Green Onions

Directions: Sai Ooah Recipe

step 1

  • STEP 1.Grind the dry chilies in the grinder and make a coarse powder.

  • STEP 2.Take a bowl to add- chopped lemongrass, sliced galangal, sliced turmeric, chopped shallots, garlic cloves and shrimp paste, 1tbsp fish sauce and now take a hand blender and blend it into a smooth paste. Also, add the chili powder and make a fine paste out of it.

  • STEP 3.Take the grounded pork in a mixing bowl and add the pasta, and mix it well, use your palm to mix the paste and the pork.

  • STEP 4.Now add some chopped green onion, 5-6 sprigs cilantro. Add finely chopped 5 kaffir lime leaves (leaving the center spine) and mix this all up.

  • STEP 5.Make the size and shape of the sausages the way you like it, you can go traditional and hardcore, or just take the half of mixture, dump it in a plastic rape, roll the plastic tie the ends like toffee, and make a cylindrical shape.

  • STEP 6.Keep it in the freezer for at least 2hours or overnight.

step 7

  • STEP 7.Grill the sausages in the grilling machine. Each side will take 4-5mins l, make sure to grill the sausages from all sides.
