Sabudana vada is a popular crisp fried snack made with tapioca pearls (sago), roasted peanuts, boiled potatoes and herbs. It is a popular Maharashtrian snack that is eaten not only as a tea time snack but also as a fasting or Upvas/ Vrat food.
STEP 1.👉Wash and Soak sabudana in 1 bowl water. Boil potatoes.
STEP 2.👉Strain sabudana and add in a mixing bowl. Peel and grate potato and ginger. Chop green chilli and coriander leaves and mix. Crush peanuts coarsely and mix. Add cumin seeds, salt, black pepper powder and mix.
STEP 3.👉Mix the ingredients with your hands thoroughly and make a dough.
STEP 4.👉Apply some cooking Oil on your palm. Take a portion of dough and make a ball and flatten it on your palm and make a vada. Like wise make all the vadas.
STEP 5.👉Heat oil in a wok and deep fry vadas till crispy golden brown color Strain and remove in a plate.
STEP 6.👉Serve hot with tamarind chutney.
