Ingredients for Ropa Vieja Empanadas Recipe

  • 45 gram flank steak
  • 1/5 tablespoon olive oil
  • 1/10 teaspoon annatto seeds
  • 1/20 cup yellow onion
  • 1/20 cup red bell pepper
  • 1/10 cup Tomatoes
  • 1/10 teaspoon cumin
  • 1/10 teaspoon Black pepper
  • 1/10 clove garlic
  • 0.07 cup sliced pitted manzanilla olives
  • 1/20 cup Carrot
  • 1/10 teaspoon Water
  • 1/10 No.s egg
  • 1.50 No.s whole wheat empanada dough disks
  • 0.40 teaspoon hot sauce

  • STEP 1.1 take steak in a pan and cover it with water. Boil it for 1 hour with the lid on.

  • STEP 2.2 keep the steak aside and let it cool and then cut it into pieces.

  • STEP 3.3 heat some oil in a pan and add annatto in it.

  • STEP 4.4 cook it for 1 minute and then discard the seeds.

  • STEP 5.5 to this add onion, bell pepper, tomatoes, cumin, salt, black pepper, garlic and cook it for 2 minutes.

  • STEP 6.6 to this add steak, stalk, olives and carrot.

  • STEP 7.7 stir it well and let simmer on low flame for 10 minutes.

  • STEP 8.8 allow the steak to cool for a few hours or overnight.

  • STEP 9.9 preheat the oven at 400° f.

  • STEP 10.10 in a bowl mix egg and 1 tsp water.

  • STEP 11.11 moist the edges of the dough disk with egg mixture and place the filling in the center.

  • STEP 12.12 fold it into the half moon shape and seal it by gently pressing the edges.

  • STEP 13.13 crimp the edges with a fork so that it will be sealed properly.

  • STEP 14.14 lightly brush the empanadas with egg mix and bake them for 23 minutes at 400° f.
