  • 1 No.s yucca, peeled, washed, and cubed
  • 1 No.s yellow yam, peeled, washed, and cubed
  • 2 No.s carrots, peeled and sliced
  • 2 No.s small / medium sweet potatoes
  • 1 No.s onion, diced
  • 4 No.s cloves garlic, minced
  • 1 tablespoon fresh minced ginger
  • 1 No.s small hot pepper, seeded and minced
  • 400 gram coconut milk
  • 1 tablespoon curry powder
  • As required Salt and Pepper
  • As required Plantain Chips
  • 2 No.s green plantains, peeled and sliced
  • 3 tablespoon coconut oil
  • As required Salt

    • STEP 1.1 - heat some oil in a pan and saute onions and garlic in it.

    step 3

    • STEP 2.2 - now add all the vegetables, coconut milk and cup of water to the pan.

    step 4

    • STEP 3.3 - simmer the vegetables for 10 minutes on medium heat.

    step 5

    • STEP 4.4 - add hot pepper, salt, curry powder and black pepper to the mix and cook for 15-20 minutes.

    step 6

    • STEP 5.5 - heat oil in a skillet and fry sliced plantains in it.
