  • 1 Medium beets, washed
  • 1/2 teaspoon Olive oil for roasting the beets
  • 1/2 pinch A wo of salt
  • 1/2 Large carrots, shaved into ribbons or grated
  • 0.13 cup Crumbled low fat goat cheese
  • 0.08 cup Raw pumpkin seeds
  • 0.08 cup Chopped pecans
  • 0.06 cup Chopped green onion
  • 3/4 tablespoon Honey
  • 1/2 tablespoon Olive oil
  • 1/4 tablespoon Balsamic vinegar
  • 1/4 teaspoon Dijon mustard
  • 1/2 Juice fresh oranges
  • As required Salt and pepper to taste
