Ringna No Olo is a classic dish made from roasted brinjals and when combined with green chillies, ginger and spices they release flavors that are absolutely delectable. This dish known as Baingan Bharta in some regions of India, is prepared in a similar way with subtle variations.

Ingredients for Ringna No Olo Recipe

  • 2 Brinjal
  • As required FOR MASALA
  • 1 tablespoon Ghee
  • 2 Onions finely chopped
  • 4 Garlic finely chopped cloves
  • 1 inch Ginger finely chopped
  • 3 Green chilly chopped slit
  • 2 Torn Bay leaf Nos
  • 1 stick Cinnamon broken inch
  • 2 Tomatoes finely chopped Nos
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Red chilly powder
  • As required FOR GARNISH
  • 1 teaspoon Ghee
  • As required Coriander leaves chopped

step 1

  • STEP 1.using a stand or a roti grill, roast the brinjals directly over the flame. Turn every 1-2 minutes to char evenly. When well roasted, after 4 to 5 minutes, skin will crack and split. Flesh will be soft when pressed. Keep it aside to cool on a plate.
  • STEP 1.When cooled peel off the skin cut off the stalk and finely chop the brinjals. to prepare masala, preheat a pan and add 1 tsp of ghee or mustard oil, 2 finely chopped onions, 4 cloves of finely chopped garlic, 1 inch of finely chopped ginger, 3 slit or chopped green chilies, 2 torn bay leaves and 1 inch stick of cinnamon.
  • STEP 2.Saute onions on medium heat till soft and translucent but not caramelised. Add 2 finely chopped tomatoes , 1/2 tsp turmeric , 1 tsp coriander powder , 1/2 tsp cumin powder and 1 tsp red chili powder. Stir well and cook till tomatoes are soft.
  • STEP 3.Add chopped brinjal and stir . Add salt to taste. Mix to combine well with the masala. Then add 1 tsp ghee for additional taste and saute. Cover the pan and simmer for 3 to 4 minutes. Turn off the heat .
