An easy yet healthy lunch recipe cooked in coconut milk. Peas and rice can be a very nutritious meal. Peas are high in protein, fiber and other nutrients while rice has carbs. All it takes is a bowl of rice, coconut milk, teaspoon ground all spice, fresh thyme and chicken stock (optional). Peas and rice is a very popular dish of Jamaica also known as 'Gungo peas and rice' and made with coconut milk.

Ingredients for Rice And Peas Recipe

  • 8 cup long grain white rice
  • 8 cup Water
  • 4 cup red kidney beans
  • 2 cup coconut milk
  • 6 sprig Thyme
  • 3 No.s garlic cloves
  • 1 No.s scotch bonnet pepper
  • As required Salt
  • As required Black pepper
  • 6 Stalks Scallion

Directions: Rice And Peas Recipe

step 1

  • STEP 1.1 - wash and soak the kidney beans for 2 hours.

step 2

  • STEP 2.1 - boil the kidney beans for 45 minutes on medium high flame.

step 3

  • STEP 3.2 - now add scallion, thyme, garlic, scotch bonnet pepper and coconut milk.

step 4

  • STEP 4.3 - bring it to boil.

step 5

  • STEP 5.4 - add rice and give everything a nice mix.

step 6

  • STEP 6.5 - reduce the heat to low.

step 7

  • STEP 7.6 - cover and cook for 25 minutes.
