Refreshing and crunchy raw mango salad Recipe

With the weather turning unbearably hot, sultry and gruelling in the past few weeks, i was looking to eat a wholesome, light and easy salad one afternoon for lunch. I drew inspiration from the traditional raw mango kosambari that is made in south india. I added the ingredients i had lying around in my fridge at home on that particular day and came up with this truly tangy, delicious and healthy one pot salad meal:).

  • 1/4 Raw Mango/ Kairi big, peeled, de seeded and grated
  • 0.13 Cabbage of a medium sized one, finely chopped
  • 1/4 Apple medium sized, peeled and finely chopped
  • 1/4 Cucumber small, peeled and finely chopped
  • 0.13 cup Frozen corn Kernels , lightly steamed
  • 0.06 cup Split Green Moong Dal th soaked for an hour
  • 1/4 Split Bengal Gram Dal/ Chana Dal tbspn
  • 1/4 lemon Juice of medium sized lemon, freshly squeezed
  • 0.13 Sugar tspn
  • As required Salt
  • As required Curry Leaves a handful
  • 1/4 Mustard Seeds tspn
  • 1/4 pinch Asafoetida/Hing
  • 1/2 Green Chillies , slit
  • 1/4 Dessicated Coconut Powder tbspn
  • 1/4 Oil and a 1/2 tspn
