STEP 1.In a pressure cooker add 1 cup washed rice, 1 ½ cup water, 1 tbsp oil, ½ tsp salt. Pressure cook for 3 whistles then turn the heat to simmer for 3 minutes. Turn off the heat and allow the pressure to release naturally.

STEP 1.Open the cooker and empty the rice onto a wide flat plate. Spread it out and allow rice to cool for 10 to 15 minutes.

STEP 1.In a hot pan add 1 tsp oil. When the oil is warm, add 1inch ginger finely chopped, ½ cup finely chopped spring onions with leaves. Saute for a few seconds.

STEP 1.Add ½ cup of finely chopped beans, ½ cup finely chopped carrots, ½ cup finely chopped red cabbage, ½ tsp salt. Stir fry on low heat. Cover the pan and cook, stirring intermittently. After 3 to 4 minutes turn off the heat.

STEP 1.Add the cool rice to the cooked vegetables. Add 2 tsp crushed black pepper, 1 tsp rice vinegar or apple cider vinegar.
