  • 1/2 Medium red bell peppers
  • 1/2 No.s Medium jalape
  • 1/4 Garlic head cloves separated
  • 1/4 Medium red onion quartered
  • 0.06 cup Olive oil
  • 1/2 Dried chipotle peppers roughly chopped
  • 1/2 Dried guajillo peppers roughly chopped
  • 1/2 Canned chipotles in adobo
  • 1/4 teaspoon Small handful fresh oregano dried oregano
  • 1/4 tablespoon Smoked paprika
  • 1/4 teaspoon Ground cumin
  • 1/4 teaspoon Ground coriander
  • 0.13 teaspoon Ground cinnamon
  • 1/4 tablespoon Cumin seeds
  • 0.08 cup Sherry vinegar
  • 3/4 cup Store bought or homemade chicken stock
  • As required Salt to taste
  • 4 ounce Extra firm tofu patted dry with paper towels and pressed to remove excess water
