Ingredients for Rava upma Recipe

  • 0.19 cup Rava (Sooji/Semolina)
  • 0.06 teaspoon Mustard seeds
  • 1/4 teaspoon Chana Dal (optional)
  • 1/4 teaspoon Urad Dal (optional)
  • 1/4 inch Pinch asafoetida
  • sprig 1-2 sprig
  • 1/4 Pieces Medium onion
  • 1/4 Pieces Finely chopped
  • 0.13 teaspoon Grated ginger
  • 1/2 g reen Chilli
  • 1/4 Pieces Chopped
  • 3/4 tablespoons Carrot
  • 1/4 Pieces Finely chopped
  • 1/2 tablespoons Fresh or frozen green peas
  • 3/4 tablespoons Capsicum
  • 1/4 Pieces Finely chopped
  • 1/4 g Large tomato
  • 1/4 Pieces Finely chopped
  • 1.25 Pieces Tomoto small
  • 1/2 tablespoons Finely chopped coriander leaves
  • 1/4 teaspoon Lemon juice
  • to taste Salt
  • 1/4 tablespoon Ghee (clarified butter)
  • 1/2 tablespoons Cooking oil
  • 0.38 cups 1 1/2 cups

Directions: Rava Upma Recipe

  • STEP 1.[5/17, 3:28 PM] Shipra Mehrotra: teaspoon urad dal (hulled and split black gram)
  • STEP 2.[5/17, 3:29 PM] Shipra Mehrotra: Heat a pan or kadai first. Add 1 cup rava or cream of wheat (fine variety).
  • STEP 3.[5/17, 3:30 PM] Shipra Mehrotra: Begin to roast the rava. Stir often while roasting the rava
  • STEP 4.[5/17, 3:31 PM] Shipra Mehrotra: The rava or sooji grains should become fragrant and start to look dry, separate and crisp. Don’t brown the rava.
  • STEP 5.[5/17, 3:33 PM] Shipra Mehrotra: . Once the rava becomes fragrant and starts to look dry and crisp, switch off the flame and put the roasted rava on a plate and set aside.
  • STEP 6.[5/17, 3:35 PM] Shipra Mehrotra: In a pan, heat 2 tablespoons ghee (clarified butter) or oil. You could use sunflower oil or peanut oil or safflower oil or any neutral tasting oil.
  • STEP 7.[5/17, 3:35 PM] Shipra Mehrotra: . Lower the heat. Add 1 teaspoon mustard seeds. When you hear the crackling sound of mustard seeds, it means they are getting fried.
  • STEP 8.[5/17, 3:36 PM] Shipra Mehrotra: Now add the ½ teaspoon cumin seeds along with 1 teaspoon chana dal (husked and split bengal gram) and 1 teaspoon urad dal (husked and split black gram).
  • STEP 9.[5/17, 3:36 PM] Shipra Mehrotra: Stirring often fry until the chana dal and urad dal begin to brown a bit.
  • STEP 10.[5/17, 3:37 PM] Shipra Mehrotra: . Immediately add 10 to 12 cashews and begin to fry on a low to medium-low heat.
  • STEP 11.[5/17, 3:37 PM] Shipra Mehrotra: By the time the cashews get golden the dals should also be golden.
  • STEP 12.[5/17, 3:37 PM] Shipra Mehrotra: 12. Now add the finely chopped onions.
  • STEP 13.[5/17, 3:38 PM] Shipra Mehrotra: . Sauté the onions until they soften and become translucent on a low to medium-low heat.
  • STEP 14.[5/17, 3:38 PM] Shipra Mehrotra: Then add the chopped green chillies, ginger and curry leaves. You can also add 1 dried red chilli at this step.
  • STEP 15.[5/17, 3:39 PM] Shipra Mehrotra: Mix well & sauté for a few seconds.
  • STEP 16.[5/17, 3:39 PM] Shipra Mehrotra: . Then add 2.5 cups water to this mixture.
  • STEP 17.[5/17, 3:39 PM] Shipra Mehrotra: Add salt as required. Mix well and check the taste of water. It should be a bit salty but not too much.
  • STEP 18.In case if the salt becomes less in the dish, you can always sprinkle some salt from the top when eating
  • STEP 19.[5/17, 3:40 PM] Shipra Mehrotra: Then add 1 teaspoon sugar. Sugar is optional and you can skip it. We prefer a slight sweet taste in the upma and hence we add it.

  • STEP 21.[5/17, 3:40 PM] Shipra Mehrotra: . Stir again. On a medium to high flame, heat the water and let it come to a rolling boiling.

  • STEP 23.[5/17, 3:40 PM] Shipra Mehrotra: When the water comes to a rolling boil, lower the flame to its lowest. Then add the rava in 4 to 5 batches with a spoon.

  • STEP 25.[5/17, 3:40 PM] Shipra Mehrotra: . Once you add the first batch of rava, stir and mix immediately so that the roasted rava gets mixed evenly with the water.
  • STEP 26.[5/17, 3:41 PM] Shipra Mehrotra: Then add the next batch of rava. Mix and stir again very well ensuring that the batch of rava is mixed evenly in water.
  • STEP 27.second batch of rava added
  • STEP 28.[5/17, 3:41 PM] Shipra Mehrotra: Continue to add and stir the rava up to the last batch.
  • STEP 29.[5/17, 3:41 PM] Shipra Mehrotra: Quickly stir and mix very well. The rava grains will absorb water, swell and get cooked.
  • STEP 30.[5/17, 3:41 PM] Shipra Mehrotra: Cover and allow the rava upma to steam for 2 to 3 minutes on a low heat.
  • STEP 31.[5/17, 3:42 PM] Shipra Mehrotra: Then switch off the heat. In the below photo, the rava is cooked well and the suji ka upma is ready.

  • STEP 33.[5/17, 3:42 PM] Shipra Mehrotra: Lastly add about 2 tablespoons chopped coriander leaves (cilantro). You can add more coriander leaves if you like.
