The base is a light, spongy dhokla made with suji, moong dal, and poha — fermented and steamed to perfection for a delicate yet satisfying bite. What sets this dish apart is its bold three-layered chutney experience: A green chutney bursting with the freshness of coriander, mint, and lemon. A sweet red chutney, delicately balancing the heat of red chilies with the tang of tamarind and richness of jaggery. And finally, a creamy pink chutney drizzled over the top — made from curd, beetroot, coconut, and Aashirvaad Chat Masala — offering a cooling, tangy finish and a visual pop of color.

  • 3.75 cup * Moong Dal (split yellow or green) – (soaked – hrs)
  • 5.13 cup * Poha (flattened rice) – (soaked for mins)
  • 1/4 cup * Curd (yogurt) –
  • 1/2 nos * Green chili –
  • 1/2 inch * Ginger –
  • As required * salt – to taste
  • 1/2 tsp * Lemon juice –
  • 1/2 tsp * Eno fruit salt or Baking soda –
  • As required Green chutney
  • 1/2 cup * Coriander –
  • 0.13 cup * Mint –
  • 1 nos * Green chilies –
  • 1/4 inch * Ginger –
  • 1/2 tsp * Lemon juice –
  • As required * salt – to taste
  • As required * Water – as needed
  • As required Sweet red chutney
  • 1 nos * Dried red chilies – (soaked
  • As required deseeded for mild spice)
  • 1/2 tbsp * Tamarind paste –
  • 1 tbsp * Jaggery –
  • 1/2 nos * Garlic – small clove (optional)
  • 1/4 tsp * Cumin seeds –
  • As required * Water – as needed
  • As required * salt – to taste
  • As required Pink Chutney
  • 0.13 cup * Grated beetroot –
  • 0.13 cup * Grated coconut –
  • 1/4 cup * Curd –
  • 1/2 tsp * Aashirvaad Chat Masala –
  • As required * salt – to taste
  • As required Optional Tempering
  • 1/2 tbsp * oil –
  • 1/2 tsp * Mustard seeds –
  • As required * Curry leaves – a few
  • 1/2 nos * Green chilies (slit) –
  • As required * Hing – a pinch

Directions: Rava Moong Dhokla Recipe

  • STEP 1.Preparation Steps
  • STEP 2.1. Make the Dhokla Batter
  • STEP 3.1. Blend soaked moong dal, poha, green chili, and ginger with little water into a smooth paste.
  • STEP 4.2. In a bowl, mix:
  • STEP 5.Moong dal-poha paste
  • STEP 6.Aashirvaad Suji
  • STEP 7.Curd, Lemon juice, and Salt
  • STEP 8.3. Rest the batter for 30 minutes.
  • STEP 9.4. Before steaming, add Eno or baking soda and mix gently in one direction until bubbly.
  • STEP 10.2. Steam Layered Dhokla
  • STEP 11.1. Grease a steaming tray or thali.
  • STEP 12.2. Pour half the batter and steam for 10 minutes.
  • STEP 13.3. Spread a thin layer of green chutney, then sweet red chutney.
  • STEP 14.4. Gently pour the remaining batter and steam again for 10–12 minutes, or until a toothpick comes out clean.
  • STEP 15.5. Let it cool, then cut into squares or diamonds.
  • STEP 16.3. Prepare Pink Chutney
  • STEP 17.1. Blend beetroot, coconut, and curd into a smooth chutney.
  • STEP 18.2. Add Aashirvaad Chat Masala and salt. Mix well and chill.
  • STEP 19.4. Final Assembly
  • STEP 20.1. Cut steamed dhokla.
  • STEP 21.2. Add a light tadka (mustard seeds, curry leaves, green chili in oil).
  • STEP 22.3. Spread a small spoon of pink chutney on top of each dhokla piece.
  • STEP 23.4. Garnish with coriander or grated coconut (optional).
