Cooking Directions

  • STEP 1.Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  • STEP 2.In a large pan, heat olive oil over medium heat. Add diced eggplant, zucchini, bell peppers, and onions. Cook until vegetables are softened.
  • STEP 3.Add crushed garlic, chopped tomatoes, tomato paste, dried herbs, salt, and pepper. Stir well and let the mixture simmer for 10 minutes.
  • STEP 4.Take a sheet of filo pastry and brush it with melted butter. Place another sheet on top and repeat the process until you have 3 layers.
