STEP 1.Recipe
For rabri boil some milk on the flame put some sugar in it and boil it till turn thick then keep it for cooling down in the fridge.soak some saffron in the milk and add saffron milk in the thick milk.
For chhena, take some raw and low fat milk and boil it then turn off the flame and continuously sitre it for 10 minu and add it in the boiled milk gradually to curdl it.
Take a big bowl, place a strainer in it and keep a cotton cloth on it then put the curdled milk in it and wash it properly then squzzee it and tie iit and keep it for 30 to 35 minu . Than mash the Cheena and knead it with palm and add some corn flour in it . and again knead it continuously for 5 to 6 minu.than make flat balls of chhena. Keep a pan on flame..put some sugar and water and keep it for boiling put the flat balls . chhena balls / Rasmalai balls in the boiling water and boil for 20 minu on high flame.
Than put the Rasmalai balls in the ice cold water for some time.take out the Rasmalai balls in a serving plate put the thick milk on it .and garnish it with some saffron and chopped pistachio and Almonds .
